Back to Bloggin'


So I've decided to truly to commit to bloggin!  Would love to say that I could update 3 times a day but I'm setting my goal out small to make sure I post at least once a day.  I think this is attainable goal, and I hope you will stop by from time to time!

So now that that little bit of "business" is out of the way onto fun food stuff today....

At work today a co-worker brought in some Easter Candy. I could not resist the chocolate bunny or the Reese's Egg (who could right??)  Anyway I was munchin down on my little delicious chocolate bunny I thought how many people start with the ears when they eat a chocolate bunny?  Don't tell me I'm the only one that takes the ears off first??  Ha ha

Then later in the afternoon (after lunch) Sorry no pics of lunch I was soooo starving I didn't have time to take a pic.  But lunch was a tuna salad sandwich on a whole wheat tortilla wrap with steamed broccoli on the side---sooooo good!  So back to after lunch I decided to eat the Reese's peanut butter cup egg. 



Yummy!!  But as I was eating it I thought there has to be a healthier alternative to this little yummy treat......and so this was my creation much later in the day:




0% FAGE Yogurt
1 packet Truvia
About 1/2 a tablespoon all natural crunchy peanut butter

It was AMAZING!!!  Really I think in the future I will choose this snack over the Reese's.  It may be a bit more calories than the candy but its a better choice in terms of good fats and protein.

Shopping and Giveaways!!

Friday Friday!!

It's finally FRIDAY!!  Yay!! We have a pretty busy weekend in store so this is going to be a quick post.

Breakfast....

Yummy!  Scrambled egg whites, some sauteed red pepper and onion, a little avocado, 2 slices of Applegate Farms bacon, and a side of natural unsweet applesauce. 

Hope everyone's Friday is off to a great start!

Oh one more thing...bought my first Larabar this morning.  Pretty excited to try it later...I'll let you know my thoughts.

HARD boiled eggs

So this morning I was boiling up some eggs for my lunch and forgot set the timer!  When I went back in the kitchen I saw that almost all the water had evaporated. Yikes!  Since I wasn't sure how long they had been going I decided to add some more water and boil for 10 more minutes.  Let's just say I was bit absent minded this morning and very nervous when I cracked the eggs at lunch!  But they were boiled--HARD boiled but still tasted delicious on top my salad.

Breakfast....
A strawberry smoothie with some added protein powder.  Sorry  no pics was running VERY late again today( is anyone noticing a trend here...haha)

Lunch.....
A Delicious Steak Salad.  I used the left over steak from dinner and tossed it with romaine, broccoli, celery, blue cheese crumbles, some sliced avocado and of course my HARD boiled eggs!!

Dinner....
Not sure yet thinking tuna or chicken salad.  Needs to be something quick as our microwave pooped out last night so after a quick bite we are heading to Lowe's.  You can't spell FAMILY without microwave right??!!

Communal Space

I work in an office just like probably every other office out there in America.  And as I am sure they all have their issues it seems like the number 1 problem is the Office Fridge.  I've never had a problem with anyone taking my lunch or anything I place in the fridge, but apparently there is a "fridge bandit" on the loose at work these days.

When I went to make my lunch I noticed an apple sitting in the fridge.  Now, I know that I did not bring this apple nor do I have any idea who this apple belongs to but the most important thing here is the apple does not belong to me!!  Well apparently the "fridge bandit" has taken an apple or two from this person because not only was her first and last name listed on the apple on a piece of tape but she also had her email address and cell phone number listed as well!!  Really people??  Just quit taking things that don't belong to you!  It made me sad to think she had to protect that apple with all of the information in hopes it would be nabbed.  I know sometimes communal space can be hard or tempting but if it ain't yours don't touch it!

So breakfast was a most delicious Green Smoothie!  Sorry no pics was running VERY late


Lunch was tuna salad over romaine lettuce and some broccoli with a colby jack cheese stick on the side.

It was the hubby's birthday last night so we enjoyed steak and roasted cauliflower.

 My husband's birthday cake his co-worker made for him!  Isn't is awesome!  The grapes on the sides and the banana in front were cake as well but looked so real!  I was told it was delicious as it is for sure not sugar free or starch free.
So my dessert was what I call "Strawberry Ice Cream"
A few frozen strawberries, some crushed ice, a little bit of whipping cream and a little bit of sweetener and whirl it int he blender until somewhat smooth,  I added some sliced almonds to the top because I love them!

Well it's Thursday friends we've almost made it through another work week

"Mom Jeans" and other things....


I am lucky enough to work at an office where jeans are perfectly acceptable attire any day of the week....however I usually only use this luxury once or twice a week.  So today as I was putting on my jeans I thought to myself "Hmm...I wonder if these would classify as Mom Jeans?"  The reason.....I am a short legged long torso go so the usual jeans are low rise or mid rise for me.  They tend to fit my short legs better, but anyway these jeans were a bit more high waisted then I am used to and my mind suddenly flashed to the whole "Mom Jeans" thing.....

But no really I don't think mine were that bad but it sure felt different to wear such high waisted jeans. I meant to snap a picture to see if I was over analyzing my higher rise jeans but unfortunately forgot and changed into work out clothes once I got home.

Food for the day was rather un-eventful until my afternoon snack.

Yum!  My favorite Greek Yogurt FAGE!! Mixed with a little sweetener, sliced almonds, ground Cinnamon, and chia seeds.  This is almost better than ice cream----hmmm maybe I am using the word almost pretty lightly here but it's still a delicious, filling, and nutritious snack!


Dinner was what I think is becoming one of my new favorites....Zucchini Pasta Bowl


 First use a julienne peeler to peel the zucchini
 Then add them to a medium heated skillet with a little olive oil and garlic.  Toss them around for 2-5 minutes.  You don't want to over cook them or they will get soggy.
 I added some Monte Bene Farm Fresh Garlic Marina. ( All Natural, no sugar added...good stuff!)

I also added some shredded chicken that I had just boiled up on the stove and then "shredded" by using 2 forks to pull apart, some steamed broccoli, and a little shredded mozzarella cheese and Parmesan.  This was soooo yummy and I didn't miss the real noodles that the rest of my family was eating at all!!

So I dont' think anyone is reading my blog yet (but a girl can be hopeful right?)  So my question if anyone is out there....do you own a pair of "Mom Jeans"

It's National Pancake Day

 Aaah coffee how I love thee.....


Since it's national Pancake Day I decided to whip up some most delicious Cream Cheese Pancakes.  If you are low carb lover then you have to try them!  They don't quite have the same texture has a regular pancake but will definitely cure the craving.


I topped the pancakes with some slivered almonds a tiny bit of butter and some Walden Farms Sugar Free Syrup.  Had some Applegate Farms bacon and a side of unsweetened applesauce.

Running a little short on time this morning so I will be sure to post the recipe later today!

Oh Monday....I'm so not ready for you

Amazing how fast the weekends fly by isn't it?  I was really not ready for the alarm clock to remind me that it was indeed Monday morning.
I was running a little late (nothing new....I tend to "fart around" and doddle a lot in the mornings...something I am trying to work on) so didn't have time to take any quick pics of breakfast.

Lunch was out to Cheddar's with the co-workers and since they don't know about my blog I wasn't about to bust out the camera and start taking pics of everyone food :)  Besides the food was pretty uneventful.

Dinner was rushed and crazy!  My husband was working late and after picking the kids up from daycare and getting home I just wasn't feeling cooking too much so I just whipped up one of my favorite loaded salads.

Romaine lettuce, red and green peppers, blue cheese crumbles. a sliced up hard boiled egg white, Applegate Farms bacon, chopped celery, sliced avocado and Marie's Creamy Ranch Dressing

Dessert was one of my favorite foods - Fage Greek Yogurt with a little added Truvia sweetener, sliced strawberries, blueberries, and chia seeds. 

Well since I am posting this late and it is actually already Tuesday morning as I finish up this post and looking at the above picture I am really starting to get hungry.  Guess I better get in the kitchen.

Sunday Funday

Sunday Funday = laundry, and dishes in my house.....

So in the midst of getting caught up on the house work I decided to try a new smoothie I had been reading a lot about lately.  A "green" smoothie! I'm lucky enough to really enjoy vegetables on their own, raw or cooked so I have no problem getting in all my veggies in a day but thought it would be great to be able to sneak in an extra serving while having a fruity flavor added. 
So I threw all the ingredients in the blender and viola!  A most delicious green smoothie! 

It was very filling and quite tasty.  If you can get over the "greenness"(is that even a word?) I would suggest giving it a try.  Here's the recipe:

1 cup unsweetened almond milk
1/2 frozen banana
5 frozen strawberries
1/2 packet instant coffee
1 1/2 large handfuls of spinach (I used some baby spinach)
about 1/2 cup crushed ice

Dinner was burgers and roasted cauliflower.  It turned out to be a beautiful afternoon here in Texas so we decided to eat outside on the patio.  The kids really enjoyed it although once the sun went down it got a little chilly pretty quickly. 
Dinner:  Yum! I had mine with no bun( loving the low carb life) and lots of added toppers.  Goat cheese, lettuce, red onion, Duke's Mayo, Sugar Free Ketchup, mustard and a little avocado on the side.




This was my first time trying Goat Cheese and I have to say it was really good! Very smooth with a little added sweetness.  I can't wait to add it in to more recipes in the future.
